Chilled conical fermenters are used to control the temperature of fermentation through an integrated temperature controller.
More advanced units are cooled by simply plugging them into an outlet, while others may require chilling through an ice bath in a cooler. Some advanced conicals include both integrated heating/cooling systems.
These advanced conicals measure the wort temperature instead of the ambient air. Wort undergoing active fermentation can measure a few degrees above the desired temperature.
