For the additional ball valves that we added to our kettles and pumps, we opted for 2-piece ball valves (shown in picture) instead of 3-piece such as Blichmann ball valves.
The benefit of 3-piece ball valves is that they can be completely disassembled for cleaning. We find this feature to be of questionable value on the 'hot side' of the brewing process where everything will be boiled anyway. Sanitation is not critical on the hot side of the brewing process. If you prefer to have matching ball valves, by all means consider Blichmann ball valves.
A full port (also known as full bore) ball valve has an over-sized ball so that the hole in the ball is the same size as the pipeline resulting in lower friction loss.
Locking handles are optional and avoid having a ball valve open by accident. Locking handles have a ring of metal near the pivot that must be manually slid up to allow the handle to turn.
