The aeration time required when using diffusion stones can be greatly decreased by using pure oxygen from a tank (shown in picture) since atmosphere is only 20% oxygen.
Aeration with pure oxygen only takes 1-2 minutes instead of 30-120 minutes as is required with systems that pump atmosphere through a diffusion stone. We recommend the following:
- Ales up to 1.060: 1 litre per minute for 60 seconds (per 5 gallons)
- Ales above 1.060, all lagers: 1 litre per minute for 120 seconds (per 5 gallons)
For ales above 1.100 and lagers above 1.060, a second dose of 1 litre per minute for 120 seconds (per 5 gallons) is recommended 12-18 hours after the yeast is pitched.
It is important to follow instructions with pure oxygen based aeration systems as, if not done properly, the wort may be over-oxygenated which can lead to other problems.
Pure oxygen based system are very useful in extremely high gravity beers and/or when high attenuation is required.
